Preheat oven to 450°F. Wash and dry all produce.

Heat a drizzle of @olive oil{1%tbsp} in a #medium pot{} over high heat. Add @onion{1%unit}, @bell pepper{1%unit}, and half the @blackening spice{1%tbsp}. Cook, stirring frequently, until softened and fragrant ~{2%minutes} to ~{3%minutes}.

Add @jasmine rice{1%cup}, @chicken stock concentrate{1%tbsp}, 1%cup water, @salt{1%tsp}, and @pepper{1%tsp}. Stir to combine. Cover, reduce heat to medium-low, and simmer ~{15%minutes}. Remove from heat and let stand, covered ~{5%minutes}.

While rice stands, rinse @shrimp{8%oz} under cold water, then pat very dry with paper towels. Season shrimp with @cajun spice blend{1%tbsp}.

Pat @chicken cutlets{4%pieces} dry with paper towels and place between two large pieces of plastic wrap. Pound with a mallet or rolling pin until about ¼ inch thick. Season all over with remaining @blackening spice{1%tbsp}, @salt{1%tsp}, and @pepper{1%tsp}.

In a #medium bowl{}, combine @cream cheese{4%oz}, @parmesan cheese{½%cup}, @spinach{2%cups}(finely chopped), @lemon{½%unit}(juiced), @garlic powder{1%tsp}, and half the seasoned shrimp. Season with salt and pepper. Spread mixture evenly over chicken cutlets, roll up tightly, and secure with toothpicks.

Place stuffed chicken, seam sides down, on a #baking sheet{} lined with foil. Bake in preheated oven until chicken is cooked through ~{12%minutes}.

Fluff @jasmine rice{1%cup} with a fork. Stir in remaining whole shrimp and remaining chopped spinach. Taste and season with @salt{1%tsp} and @pepper{1%tsp} if desired. If necessary, warm up rice mixture over low heat. Serve chicken over rice.
